It felt to me that this year's fall slid into the forecast without any warning. And we are well aware that the “pumpkin spice” craze that takes over every major business has gone way too far, but once we actually made and tried this Shrubbie we thought it would be a crime not to share. 

The Pumpkin Pie Smash is built in a way where it can be enjoyed outdoors in the sun or cozied up next to a fire. It’s both light and bold at the same time. And while it takes a little bit more preparation to bring into existence than most of the Shrubbies we post, the effort is worth it. It’s a complex little cocktail that will impress some guests or even just yourself.

Pumpkin Pie Smash

Preparation Time 20 minutes

Ready in 3 minutes

Serves 1 drink


  • Pumpkin Pie Syrup
    • 8 oz Pumpkin Puree
    • 8 oz Water
    • 8 oz Sugar
    • ½ tsp Pumpkin Pie Spice
  • Pumpkin Pie Smash
    • 2 oz Bourbon
    • 1 oz Pumpkin Pie Syrup
    • .5 oz Lemon Ginger Shrub
    • .25 oz Fresh Squeezed Lemon Juice
    • 4 oz Sparkling Water
    • Lemon Wedge or Slice to Garnish
  • Coating for Rim(optional)
    • ½ Tbsp Ground Cinnamon
    • ½ Tbsp Ground Ginger
    • ½ Tbsp Brown Sugar
    • Pinch of Ground Allspice


  1. Pumpkin Pie Syrup
    1. Add all ingredients into a pot and regularly stir until mixture boils. 
    2. Once boiling, stir for another 2-3 minutes and pull off the heat. 
    3. Strain syrup into a mason jar and cool before using. 
  2. Coating for Rim
    1. Place all ingredients onto a plate and mix well.
  3. Pumpkin Pie Smash
    1. Rub lemon wedge around the outside top of the glass and roll in the above listed coating.
    2. Place bourbon, pumpkin pie syrup, Lemon Ginger shrub, and lemon juice into a cocktail shaker.
    3. Add ice and shake until well chilled.
    4. Strain into your desired glass.
    5. Top off with the sparkling water.
    6. Add optional garnish.
    7. Take a nice long sip of fall in a glass.


The ingredients for the coating of the rim will make enough for more than one cocktail. So if you plan to make a few of these Shrubbies, doubling the ingredients for the coating is unnecessary.
