The Acapulco is a really nice not so sour style bevvy, it’s like a love letter to a Margarita and a Hemingway Daiquiri. A perfect balance of sour and sweet makes for a smooth sipping cocktail. The blend of a simpler white rum and a bold reprosado tequila add a unique complexity that you don’t get when just using one or the other. As always fresh pressed juice is best(and pineapple juice without any additives is ideal), shake the cocktail nice and hard to get a beautiful creamy head from the pineapple juice. The layers of fruit flavors combined with the liquors are truly something to behold! We’ve added a splash of Raspberry Coriander Shrub into the already delicious Acapulco for even more complexity.

This drink should be made with an agave simple syrup, but we didn’t have any so we used plain ol’ simple syrup. If you have agave syrup sitting around then by all means substitute that into this recipe! Either way you do it, it’s a wonderful drink!
